Gluten-Free Lifestyle

For many of us, having to adhere to a gluten-free diet isn’t optional. I’m not diagnosed with Celiac Disease; rather, I have the autoimmune disease Hashimoto’s Thyroiditis, and tests show I have gluten sensitivity, in addition to dairy, soy, and 20 other foods. Whether you have Celiac Disease, gluten intolerance, or gluten sensitivity, you know how important it is to adhere to a strict gluten-free diet.

Many foods state they are ‘gluten-free,’ but most still contain trace amounts that can still make you feel horrible and can show up in GI MAP tests, even when GF foods are just made in a facility with gluten. Here is a blog post I wrote about this: Importance of a Gluten-Free Facility.

The really awesome thing about Clean Monday Meals is that not only are they gluten-free, but they are made in a gluten-free facility, so you can enjoy their gluten-free ramen noodles, spices, and soups without worry! For this blog post, I’m going to focus on their delicious ramen.

If you don’t want to wait, below is the link to my favorite gluten-free ramen noodles! I’ll tell you more about them below.

Clean Monday Meals

I came across Clean Monday Meals when I was looking for gluten-free spices, made in a gluten-free facility, which are surprisingly hard to find! Once I started looking at their website, I fell in love as I found so many other great foods for me to try! I’ll write more about what I’ve tried below.

The founder of Clean Monday Meals, Janae, has Hashimoto’s Disease, like me, as well as Celiac Disease and PCOS. She started eating clean in 2014, just a year before I had to make the switch. She created Clean Monday Meals to help her family, as well as others, have access to delicious and clean meals to make our lives easier as we go through this gluten-free and clean eating journey.

I truly appreciate her effort and can honestly say, I’m finding myself enjoying food again since discovering her site and shop!

Clean Monday Meals uses all-natural ingredients that are gluten-free, dairy-free, soy-free, non-GMO, and no MSG.

Gluten-Free Ramen Noodles

I know what you’re thinking, “I had enough ramen in college to last me a lifetime.” Well…this is different. Admittedly, I didn’t eat a lot of ramen when I was in college, but I did have some from time to time. I have to say, THESE ramen noodles and spices are WAY better than the crummy, cheap traditional wheat-based ramen I ate years ago! Unlike traditional ramen noodles, these are full of protein and healthy ingredients, plus lower sodium overall.

When I first found Clean Monday Meals, I was most interested in their gluten-free spices and ranch seasoning, but I decided to add a package of chicken ramen to my first order as well, and I’m glad I did, as it’s become a family favorite.

My 7-year-old twins and 9-year-old tried the Chicken Ramen with me, and they love it too! Which is great…but honestly…today I felt bad when I made a package just for myself because I was craving it! Haha! I’ll make an extra pack or two of them next time. It’s actually made it onto the meal plan quite often as well, they love it so much.

The ramen comes in a 12-pack of single-serve ramen cakes with seasoning. Flavors to choose from include: chicken, beef, spicy, and vegan. So far, I’ve only tried the chicken, but I’m sure the other flavors are delicious as well!

Within the first week of having these noodles, we’ve gone through over half the 12-pack, so I just ordered 3 more 12-packs today (I wanted to get to the free shipping threshold lol). I’m super excited we won’t run out anytime soon since we all love it! The main ingredient of the ramen noodles is organic brown rice flour, and you can see the full ingredients for the seasoning packet on their website here. Even the flavor packets have just a handful of simple ingredients.

The chicken stock the seasoning packet makes is delicious, as is the chewy texture of the ramen noodles. Last week I ate the chicken ramen 4 days in a row, topped with hard-boiled eggs for extra protein. It’s so delicious! Oddly enough, I didn’t even get bored of eating it that much in a week; I’m actually looking forward to having it again later this week.

How I Prepare the Gluten-Free Ramen Noodles

I tend to follow the gluten-free ramen recipe on the package, for the most part. I boil 1-1/2 cups of water per serving, with some butter, a dairy-free substitute for me, and then add the rice ramen noodles with seasoning packet, and pull them apart with two forks as they cook and loosen up. Typically, I wait about a minute or two to start pulling them apart. They recommend to boil the noodles for 4 minutes, but I always cook them for at least 5 minutes as I like my noodles to be softer.

You can also pour hot water over them, but I haven’t tried that way yet. The ramen noodles could also be used for ramen salad, Japanese-style ramen, or just ramen soup in general, as I tend to use them.

We love to add hard-boiled eggs to our ramen; I’m sure adding shredded leftover chicken, fresh vegetables, soft-boiled eggs, or pork belly would all be great additions as well! These brown rice noodles taste so much better than regular ramen noodles, from what I remember years ago.

The seasoning packet/spices that come with it make for a flavorful broth with hearty flavor for the gluten-free ramen noodles to swim in. Overall, it’s delish and a great meal! These gluten-free ramen noodles are perfect for busy weeknights or quick lunches, like I tend to use them for.

In addition to the ramen noodles that come in a 12-pack, you can also buy extra noodles they call “Beautifully Broken Ramen Noodles” if you aren’t partial to the noodle cakes. Note that for the beautifully broken noodles, they don’t come with a seasoning packet, so you’d need to order the seasoning separately, if desired.
